1 Large Sweet Onion, Diced
 
2 cups Flour
 
1 bunch Scallions, Minced
 
2 teaspoons Baking Powder
 
1 teaspoon Salt
 
1/2 teaspoon Chili Powder
 
2 cups Milk
 
2 Eggs
 
2 tablespoons Oil
 
1 cup Corn (preferably sweet)
 
6 ounces Mexican Blend Cheese
 
Butter, for Griddle

Jalapeño Bacon Maple Syrup

 
6 ounces Farmer John Premium Classic Bacon, Chopped
 
8 ounces Maple Syrup
 
1 Jalapeño Pepper, Diced

Instrucciones
1In a medium nonstick skillet, cook the bacon for the jalapeño bacon maple syrup until it begins to crisp. Set aside.
2Cook the bacon for the corn cakes until brown. Add the onion and continue to cook until bacon is crispy and onion is softened.
3While the bacon and onion are cooking, combine the flour, scallions, baking powder, salt, and chili powder in a medium bowl. Add the milk, egg, and oil, then stir in the bacon mixture, corn, and cheese. The mixture should be thick. If you'd like the griddle cakes to be slightly thinner than those pictured, add a little more milk to thin out the batter.
4Heat up a greased griddle or large skillet. Pour 1/3 cup of the batter onto the griddle per corn cake and cook until golden brown, about 2-3 minutes per side. Repeat with the remaining batter.
5Jalapeño Bacon Maple Syrup: Place the maple syrup, cooked bacon, and diced jalapeño in a skillet and simmer for 10-15 minutes. Serve the warm corn cakes with the jalapeño bacon maple syrup and enjoy!
