8 ounces Farmer John Premium Mild Pork Sausage Roll 10 Eggs 1/2 cup Flour 1 teaspoon Baking Powder, 1 Teaspoon 1/2 teaspoon Salt 16 ounces Small Curd Cottage Cheese 16 ounces Shredded Monterey Jack Cheese 1/4 cup Unsalted Butter, Melted 4 ounces Diced Green Chiles Verde or Roja Salsa, for Topping

1Preheat the oven to 350ºF. Cook the sausage until browned and crumbled. Set aside to keep warm.
2Beat the eggs until light and fluffy. Add the flour, baking powder, salt, cottage cheese, Monterey Jack cheese, and melted butter, and blend smoothly.
3Stir in the green chilies and cooked sausage. Pour mixture into a well-buttered 9 x 13 baking dish or extra-large cast iron pan.
4Bake for 45-50 minutes or until the top is browned and the center appears firm. Serve hot and top with salsa.
