12 ounces Farmer John Lower Sodium Premium Bacon, cut into smaller pieces 4 Scallions, white stems roughly chopped 3 cloves Fresh Garlic, thinly sliced 16 ounces Kimchi 4 Eggs Toppings: Sesame Seeds, Sriracha Aioli, Furikake, and Avocado, thinly sliced

1Heat a pan over medium heat and cook the bacon until crispy.
2Remove bacon from the pan and set aside, leaving the grease in the pan.
3Add the kimchi, scallions, and garlic to the pan and cook until slightly softened. Add half of the crispy bacon bits back to the kimchi.
4Crack the eggs into the pan, add a sprinkle of salt and pepper, and cover. Turn down the temp to a low simmer and gently cook to your liking. At about 5 minutes, the egg whites should be thoroughly cooked and the egg yolks should look creamy inside.
5Add the rest of the crispy bacon bits to the kimchi and eggs.
6Garnish with sesame seeds, furikake, a drizzle sriracha aioli, and avocado slices. Serve with steamed rice, if desired.
