6 Chicken Breasts, Skinless Boneless
 
Olive Oil, for Drizzle
 
2 teaspoons Kosher Salt
 
1 teaspoon Black Pepper
 
10 ounces Barbecue Sauce
 
12 ounces Shredded Monterey Jack & Cheddar Cheese
 
3 Roma Tomatoes, Diced Small
 
1 bunch Scallions, Thinly Sliced

Instrucciones
1Marinate chicken on both sides with the olive oil, salt, pepper, and 1/4 cup of barbecue sauce. Place in the refrigerator overnight to marinate or for a couple of hours before cooking.
2Preheat the oven to 400°F.
3Heat some olive oil in a large pan over medium-high heat, then brown the chicken, 4-5 minutes on each side. Place the browned chicken in an oven-safe pan.
4Pour the remaining barbecue sauce over the seared chicken. Sprinkle shredded cheeses and chopped bacon over each chicken breast.
5Place the pan in the oven for 5 minutes or until cheese is melted. Sprinkle more chopped bacon, tomatoes, and green onions over the chicken and serve with salad or steamed rice. Tip: Cook your bacon ahead of time and store until ready to use. It can last for a week.
