1 Cosmic Apple or Granny Smith, cut thinly
 
8 ounces  Sharp Cheddar Cheese, shredded
 
ounces  Sharp White Cheddar Cheese shredded
 
8 slices  Sourdough Bread
 
4 tablespoons  Unsalted Butter or Mayonnaise
 
Honey or Hot honey drizzle

Directions
1Cut apples into four portions, about 4-6 thinly sliced pieces each.
2Preheat the oven to 375ºF. Cook the bacon on a baking sheet for 15-20 minutes until golden brown and crisp.
3Preheat a large cast iron to medium-low heat. While the pan is heating, butter one side of each of the sourdough slices.

5Add the sourdough slices to the pan buttered sides down. Allow toast for about 2 minutes. Remove from the pan afterwards.
6Build the sandwich on one slice of bread, starting with 2 ounces of sharp white cheddar cheese. Add 2 slices of bacon cut in half and 4 thin slices of apple, then drizzle on the honey. Add 2 ounces of sharp cheddar on top and close the sandwich with the toasted sliced bread. Repeat the process for three more sandwiches.
7Let the sandwich cook in the pan once again for about 3-4 minutes, pressing down on it occasionally with your spatula. Carefully flip the sandwich and continue cooking another 3-4 minutes or until golden and cheese is melted.
8Cut and serve with chips or salad.
