Preheat the oven to 350ºF. Cook the sausage until browned and crumbled. Set aside to keep warm.
Beat the eggs until light and fluffy. Add the flour, baking powder, salt, cottage cheese, Monterey Jack cheese, and melted butter, and blend smoothly.
Stir in the green chilies and cooked sausage. Pour mixture into a well-buttered 9 x 13 baking dish or extra-large cast iron pan.
Bake for 45-50 minutes or until the top is browned and the center appears firm. Serve hot and top with salsa.
