Egg yolk (combine with 1 tablespoon water), for brushing

Flour, for dusting
Directions
Preheat the oven to 400ºF. Brown the sausage and add green chiles
Mix together eggs and shredded cheese in a small bowl. Add this mixture to the sausage and stir to combine
Cook the sausage, egg, and cheese mixture
Roll out the pastry dough sheet using a rolling pin to a large rectangle. Make sure to use flour so the dough doesn’t break or stick on the bottom. Spread the sausage mixture on top
Roll it up like a jelly roll and place the roll on a baking sheet seam-side down. Be sure to seal the dough well
Brush egg wash on top of the rolled dough
Bake at 400ºF or 15 minutes until golden brown. Let it cool for a few minutes before slicing. Serve with any salsa you like
