1Preheat oven to 375°F.
2Cut peppers in half and remove the seeds.
3Sprinkle with salt and pepper and bake for 20 minutes.
4While the peppers bake, brown the sausage and minced garlic in a pan.
5Once the sausage is fully cooked, drain fat and set the sausage aside.
6After the pepper halves have cooked for 20 minutes, fill each half with a scoop of sausage and shredded cheese, top with a cracked egg and cook for 15–20 minutes until the egg is cooked.
