Kosher Salt Black Pepper, To Taste Pinch Of Nutmeg 6 Ounces Whole Grain Mustard Raspberry Preserves 4-6 Slices Swiss Cheese 4-6 Eggs, Fried 8-12 Slices White Bread

1Preheat the oven to 300°F and preheat a cast-iron skillet on top of the stove for about 5 minutes.
2Make the bechamel / white sauce: in a small saucepan over medium heat, melt 4 tablespoons of butter. When bubbles have subsided, add flour and whisk vigorously for 1 minute. Slowly whisk in half & half until smooth. Bring to a simmer, and cook until thick. Remove from heat, and season to taste with salt and nutmeg.
3Spread 4-6 slices of bread generously with béchamel sauce. Lay two slices of ham on top of each, a tablespoon of jam on each, and top each with a slice of Swiss cheese; ham and cheese should slightly overlap edges of bread. Top each with a slice of bread with whole grain mustard.
4Brush the sandwiches on both sides with butter.
5Place sandwiches on prepared skillet until golden brown, then turn to cook the other side. Transfer skillet to oven, and bake until heated through and cheese is bubbling. Meanwhile, fry the eggs in another skillet with butter or oil. Slide one fried egg onto each sandwich. Sprinkle with fresh cracked black pepper. Serve hot.
