4-6 Dutch Baby Yellow Potatoes, Thinly Sliced
 
Olive Oil, for Drizzle
 
1 Small Onion, Chopped
 
2 cloves Garlic, Minced
 
2-3 Green Chard, Stems Removed & Chopped
 
2-3 Collard Green Stems, Roughly Chopped
 
2-3 Kale, Stems Removed & Chopped
 
1 Pasilla Pepper, Diced
 
1 teaspoon Chili Flakes
 
1/2 teaspoon Cumin Seeds or Ground Cumin
 
1 teaspoon Ground Coriander
 
1 teaspoon Salt
 
1/2 teaspoon Black Pepper
 
8 ounces Tomatillo Salsa
 
1 Lemon, Squeezed
 
4 Parsley Sprigs, Roughly Chopped
 
4 Medium Eggs
 
2 ounces Optional: Feta Cheese

Directions
1In a 12-inch cast iron pan or skillet with a lid, drizzle olive oil over medium heat. Sauté chopped onions and potatoes, then add the sausage until browned and cooked through.
2Add the garlic, pasilla pepper, chard, collard greens, and kale and cook, tossing regularly 3-4 minutes until softened. Season with kosher salt, chili flakes, cumin, coriander, and black pepper.
3Add 1⁄2 -1 cup of water and turn the heat to medium-low. Cover and cook for 8-10 minutes until the greens have completely wilted. Stir in tomatillo salsa.
4Using a spoon, make 4 wells. Crack an egg into each well and season each egg with salt and freshly cracked black pepper. Cover the pan and cook for another 4 minutes at 400°F or until the eggs have settled or cooked in the oven for 5 minutes.
5Serve immediately with feta cheese, parsley, and lemon on top.
