12 ouncesMeat Wieners 12oz. 12 ouncesPremium Classic Bacon 12oz. 8 Hot Dog Brioche Buns (or variety) 8 ounces Cheddar Cheese, shredded Condiments: Ketchup, Mayonnaise, Mustard, Barbecue Sauce, Guacamole, Sriracha Mayonnaise Toppings & Sides: Kimchi, Chiles, Pickled Red Onions, Sauerkraut, Pepperoncini, Potato Chips, Pickles, Crispy Onions 8 ounces Mayonnaise 3-4 tablespoons Sriracha or Chili Sauce 1 Lemon, squeezed 1 teaspoon Garlic Paste 1 teaspoon Salt 1/2 teaspoon Ground Black Pepper 2-3 Large Avocados 1 Roma Tomato, diced 1 Jalapeño Pepper, seeded & diced 1/2 White Onion, diced 1 clove Garlic, minced 1 Lime, squeezed 2 teaspoons Salt 1/2 teaspoon Black Pepper 6 sprigs Cilantro, stems removed & roughly chopped

Directions
1Cook the bacon according to package directions. Crumble and set aside. Make the sriracha mayonnaise and guacamole and set both aside.
2Sriracha Mayonnaise: Mix all the ingredients together. Taste and adjust, if needed.
3Guacamole: Remove the pits and scoop out the avocados. Mash avocados with a fork, making them as chunky or smooth as you’d like. Add the remaining ingredients and stir together. Taste and adjust, if needed.
4Grill the wieners on an outdoor grill or cast iron and toast the buns for a minute.
5Board Assembly: When ready to serve, place the bacon, guacamole, sriracha mayonnaise, cheese, condiments and toppings into individual ramekins or bowls.
6Arrange everything on a platter and serve.
