Scrambled Eggs

8-10 Large Eggs
 
2 Spoons Unsweetened Almond Milk
 
Salt And Pepper To Taste
 
1/2 Tbsp. Olive Oil Or Cooking Spray

Roasted Potatoes

 
2 Large Potatoes, Cubed
 
1 Tbsp. Olive Oil
 
1/4 Tsp. Paprika
 
1 Tsp. Garlic Powder
 
Salt And Pepper, To Taste

Breakfast Sausage

 
1/2 Tbsp. Olive Oil
 
1/2 Tbsp. Minced Garlic
 
1/2 White Onion, Finely Diced
 
1 Pound Farmer John® Original Breakfast Sausage
 
10 Tortillas
 
1 Cup Shredded Cheddar Cheese

Directions
1Heat a large skillet to medium heat and grease with olive oil or cooking spray.
2Crack 8-10 eggs into a bowl and then add 2 tablespoons of almond milk, and season with salt and pepper. Whisk until combined.
3Pour eggs onto a heated pan and use a spatula to scramble until fully cooked. Set aside.
4To roast the potatoes, preheat oven to 400ºF and place a piece of tin foil on a baking sheet.
5Prep potatoes by cubing into small chunks and place on baking sheet.
6Drizzle on 1 tablespoon of olive oil and season with paprika, garlic powder, and salt and pepper.
7Use hands to toss to make sure everything is evenly coated.
8Roast for 30 minutes at 400ºF. Toss halfway through and set aside.
9To make breakfast sausage, heat 1/2 tablespoon of olive oil in a large skillet over medium heat.
10Add onion and garlic to skillet. Sauté for about a minute before adding breakfast sausage.
11Use a spatula to sauté until fully cooked. Set aside.
12To make the burritos, heat tortillas for a few seconds in the microwave.
13Add scrambled eggs, roasted potatoes, breakfast sausage, and a sprinkle of cheese on top of your tortilla.
14Make your burritos by folding two sides in and then rolling.
