Preheat the oven to 500ºF
Cook sausage and break apart. Add chili flakes, salt, black pepper, and sear until sausage is fully cooked. Set aside
Cook mushrooms in a pan with a pinch of salt and fresh ground pepper for 1-2 minutes. Set aside
Drizzle a 13x18 rimmed baking sheet with 2 to 3 tablespoons of olive oil. Place the dough in the pan and press it out with your fingers until it reaches all the way to the edges and corners of the pan. If the dough keeps shrinking back, let it rest for 10 to 15 minutes and try again
After the dough is pressed out all the way to the edges of the pan, spread with 8 ounces of cream and top with cooked mushrooms, mozzarella cheese, and crumbled sausage
Bake for 15 minutes until the sausage is nice and cooked around the ring and the cheese has melted
When the pizza is almost done, add fresh thyme on top. Cut each pizza into bite sizes and serve
