Directions
Preheat oven to 375°F while preparing your puff pastry.
Lay out your pastry dough. Roll it into a 10×12-inch rectangle.
Spread barbecue sauce, leaving a 1/2-inch border on all sides.
Top with diced bell pepper, bacon, Monterey Jack, and cream cheese.
Starting at the long (12-inch) edge, roll the puff pastry into a log. Trim the ends so that they are even or tuck the ends in.
Using a sharp, serrated knife, carefully cut each log into 1-inch-wide slices. Arrange the rolls 1 inch apart on the prepared baking sheet with liner or parchment paper.
Bake until the puff pastry is light golden brown and the cheese is hot and bubbly, about 25-30 minutes. Immediately sprinkle with chopped parsley, or chives.
Serve warm or room temperature.
Puff Pastry (Bonus Recipe): Put the 2 cups flour and salt in the chilled bowl of a stand mixer fitted with the paddle attachment or if you have a blender or food processor that would work too. (If you don’t have them, you can prepare the dough by hand.)
Puff Pastry (Bonus Recipe): With the mixer set on low speed, work half of the butter into the flour until the mixture resembles wet sand. Add remaining butter cubes and ice water, and mix just until the dough comes together. The dough will be very soft, studded with butter chunks and a bit sticky.
Puff Pastry (Bonus Recipe): Place your dough on a clean counter with dusted flour. Use more flour if needed to help the dough come together.
Puff Pastry (Bonus Recipe): Using rolling pin, roll into a 10×12-inch rectangle.
Puff Pastry (Bonus Recipe): Fill dough with toppings as desired.
