In a sauté́ pan on medium heat, brown the sliced ham (one at a time) to warm it up for about 1 minute on each side.
Meanwhile, incorporate chili paste and 1/2 cup mayonnaise together until thoroughly mixed. Then, set aside.
Fry eggs (one at a time) while warming up your brioche bun in the pan.
Smear each brioche bun with gochujang mayo - top and bottom.
On the bottom of each bun, layer with (in the following order) spring mix, a slice of Swiss cheese, ham, a slice of Monterey jack cheese, fried egg, cilantro sprigs & Fresno peppers.
Perfect pairing: Enjoy with breakfast potatoes.
