6 Torta (Teleras) Rolls, Split In Half
 
Spicy Barbecue Sauce (Recipe As Follows)
 
Sriracha Mayo (Recipe As Follows)

Spicy Barbecue Sauce (Makes About 2 Cups)

 
4 Chipotles In Adobo Sauce
 
2 Cups Your Preferred Barbecue Sauce

Sriracha Mayo (Makes About 2 Cups)

 
4 Tbsp. Sriracha
 
2 Cups Mayonnaise
 
1 Tsp. Black Pepper
 
1 Tsp. Salt
 
1/2 Lemon, Squeezed

Directions
1Preheat your oven to 400°F.
2In a baking sheet pan drizzle with olive oil, cook pork loin for 1.5 hours, checking every 30 min for doneness.
3While waiting for pork to cook, prep sauce, mayo, cucumber, carrots, jalapeño. Mix cilantro & mint together; set aside.
4When pork loin is done, slice enough for 6 servings. About 4 slices per bun.
5Split torta bun in half, smear the bottom of the bun with sriracha mayo, top with shredded carrots, 4 slices of cucumber, 4 slices of jalapeño, 4 slices of pork loin, cilantro & mint mixture, and finally the barbecue sauce.
6Repeat with the rest of the torta buns.
7Cut in half to serve. Enjoy right after!
8Tip: Purchase fresh rolls (Teleras are ideal) for ultimate freshness.
9Spicy Barbecue Sauce: Using a stick blender, blend chipotle adobo sauce and barbecue sauce together.
10Spicy Barbecue Sauce: Set aside if using the same day or store in a refrigerator for later.
11Sriracha Mayo: Using a stick blender, blend mayonnaise & sriracha together.
12Sriracha Mayo: Set aside if using the same day or store in a refrigerator for later.
