Directions
Preheat your oven to 400°F.
In a baking sheet pan drizzle with olive oil, cook pork loin for 1.5 hours, checking every 30 min for doneness.
While waiting for pork to cook, prep sauce, mayo, cucumber, carrots, jalapeño. Mix cilantro & mint together; set aside.
When pork loin is done, slice enough for 6 servings. About 4 slices per bun.
Split torta bun in half, smear the bottom of the bun with sriracha mayo, top with shredded carrots, 4 slices of cucumber, 4 slices of jalapeño, 4 slices of pork loin, cilantro & mint mixture, and finally the barbecue sauce.
Repeat with the rest of the torta buns.
Cut in half to serve. Enjoy right after!
