Preheat oven to 400°F.
Heat up a medium-sized stock pot over medium heat. Drizzle olive oil once heated, and add diced ham to sauté until the edges are nice and brown.
Add butter to melt, using whisk add the flour and keep stirring for 1-2 minutes.
Add milk & stock slowly, continually whisking so it doesn’t burn on the bottom.
Simmer for 5 minutes until it thickens. Keep an eye on it, it may take longer or less. Lower the heat if needed.
Fold in the cheese, peas, black pepper, salt & mashed potatoes.
Spray muffin tin with pan spray or melted butter. Fill each tin with a slice of white bread and push down gently to form a cup.
Fill each with Ham & cheese gravy. Top off with cheese.
Bake for 15 minutes until golden brown and the cheese has melted.
Add scallions on top once they’ve cooled off enough to enjoy! Extra Tip: DO NOT EAT RIGHT AWAY! They’re tempting, but need to cool.
