8 Ounces Farmer John Ham, Diced Small
 
1 Tbsp. Olive Oil
 
2 Tbsp. Unsalted Butter
 
12 Ounces Whole Milk Or Half & Half
 
8 Ounces Chicken Stock
 
2 Cups Mexican-Style Cheese, Shredded, Plus More For Topping
 
15 Ounce Can Of Green Peas, Drained
 
1 Tbsp. Black Pepper
 
1 Tsp. Salt
 
1 Medium Russet Potato, Boiled & Mashed
 
1 Loaf White Bread

Directions
1Preheat oven to 400°F.
2Heat up a medium-sized stock pot over medium heat. Drizzle olive oil once heated, and add diced ham to sauté until the edges are nice and brown.
3Add butter to melt, using whisk add the flour and keep stirring for 1-2 minutes.
4Add milk & stock slowly, continually whisking so it doesn’t burn on the bottom.
5Simmer for 5 minutes until it thickens. Keep an eye on it, it may take longer or less. Lower the heat if needed.
6Fold in the cheese, peas, black pepper, salt & mashed potatoes.
7Spray muffin tin with pan spray or melted butter. Fill each tin with a slice of white bread and push down gently to form a cup.
8Fill each with Ham & cheese gravy. Top off with cheese.
9Bake for 15 minutes until golden brown and the cheese has melted.
10Add scallions on top once they’ve cooled off enough to enjoy! Extra Tip: DO NOT EAT RIGHT AWAY! They’re tempting, but need to cool.
