- 12 Ounces Farmer John Kielbasa12 Ounces
- 3 Yukon Gold Potatoes, Diced3
- 4 Garlic Cloves, Minced4
- 1 Bundle Swiss Chard, Stems Removed And Roughly Chopped1 Bundle
- 28 Ounce Can Of Crushed Tomatoes28 Ounce
- 2 Cups Chicken Stock2 Cups
- 1 Tsp. Salt1 Tsp.
- 1 Tsp. Freshly Cracked Black Pepper1 Tsp.
- Pinch Of Chili Flakes
- Pinch Of Fresh Thyme, Plus More For Serving
- 1 Bell Pepper, Cut In Quarters1
- Olive Oil, Drizzle
- Parmesan Or Gruyere Cheese If Desired
Instructions
Rinse and cut your vegetables, then set aside.
Cut Farmer John Kielbasa into 1” inches rounds. Bigger chunks gives a meatier look!
Prepare your Insta pot or Crock pot, drizzle olive oil first on the bottom of the pot.
Add and mix together all the listed ingredients - from Farmer John Kielbasa to bell peppers - into your crock pot.
If it looks too thick, add 1/2 cup stock and continue to add more if needed for consistency preference.
Put the lid on and set to cook (stew setting) for 30 minutes.
If using an instant pot, hit the meat stew setting, Normal/ High for 30 minutes. Make sure to float the valve up for pressure. After 30 minutes, release the float valve down to release pressure.
Portion into bowls and top off with more fresh thyme & shredded cheese if desired.
Enjoy with steamed rice, veggies or any toasted bread.
