Preheat the oven to 425°F
Roll out the puff pastry slightly into a rectangle, then cut into 6 squares. Place each square on a baking sheet lined with parchment paper
Place a slice of folded ham on each square, then place about 1 teaspoon of yellow peppers over the ham. Top with shredded cheese, and sprinkle with freshly cracked black pepper
Make the egg wash: In a small bowl, beat the egg with 2 teaspoons of water. Brush the corner of the puff pastries with the egg mixture
Bring the four edges of each puff pastry square together towards the center. Pinch them together in the middle and brush the pastries with egg wash. Sprinkle more cheddar cheese on top. Bake for 20-25 minutes or until golden brown
Repeat with another puff pastry in another sheet pan. You will have 12 ham pockets in total
