Directions
Peel and dice potatoes. Boil them just until tender. Drain.
Melt butter in a stock pot, add the flour and stir for a minute.
Gradually whisk in half & half and stock. Add carrots, potatoes, and spices.
Stir in ham, green peas and parsley. Add more salt if needed.
Fit the first pie crust in a deep dish 9-inch pie pan. Spoon filling into pie and unroll the second pie crust on top.
If making individual pot pies; spoon filling directly into a large ramekin and top with pie crust.
Brush the top with egg wash and cut a few slits to let steam escape. Bake at 400°F for 30 minutes.
Let cool slightly before serving.
Bonus Savory Pastry Recipe: Make the tart dough: Put the 2 cups flour and salt in the chilled bowl of a stand mixer fitted with the paddle attachment. (If you don’t have one, you can prepare the dough by hand.) With the mixer set on low speed, work half of the butter into the flour until the mixture resembles wet sand. Add remaining butter cubes and ice water, and mix just until the dough comes together.
Bonus Savory Pastry Recipe: Place your dough in a clean counter with dusted flour. Use more flour if needed to make the dough come together.
Bonus Savory Pastry Recipe: Dust more flour on the counter and cut the dough in half if only making 1 quiche recipe.
Bonus Savory Pastry Recipe: Use a rolling pin to roll the dough into a circle, large enough for quiche.
