6 Eggs
 
1-2 Pounds Red Potatoes
 
1 Cup Kimchi Store Bought Or Homemade, chopped into smaller pieces
 
8 Shishito Peppers Or 1 Poblano Pepper, Chopped Into Smaller Cubes
 
4 Ounces Baby Spinach
 
6 Ounces Brussels Sprouts, Thinly Sliced
 
1 Tsp. Black Pepper, Freshly Cracked
 
1 Tsp. Salt
 
Dash Of Furikake
 
Kewpie Mayonnaise (or other squeeze bottle mayo), drizzle
 
1 Bunch Scallions, Cut Thinly
 
Serve With Sourdough Bread, Warmed

Directions
1Preheat your oven to 425°F.
2Rinse potatoes, cut into quarters and boil for 10 minutes. Drain the water.
3In a large bowl mix together polish sausage, cooked potatoes, kimchi, peppers, spinach, Brussels sprouts, black pepper, salt and bake in 10-12” cast iron pan or regular casserole pan. Bake for 20 minutes. Add eggs on top and bake for another 10-15 minutes until egg yolk has cooked.
4Dash Furikake on top, drizzle mayo and top with scallions.
5Pro tip: Change Brussels sprouts, spinach to any greens you’d like to use that’s freshly available.
