2 ounces Peanut Oil
 
8 ounces  Shiitake Mushrooms, thinly sliced
 
6-8 ounces  Cabbage Slaw
 
1 tablespoon  Rice Wine Vinegar
 
3 tablespoons  Oyster Sauce
 
1 teaspoon  Brown Sugar
 
1 teaspoon  Soy Sauce
 
1 teaspoon  Garlic Paste
 
4 ounces Hoisin Sauce
 
4 Eggs, scrambled
 
4 cups Steamed Rice
 
Garnishes: Radishes, Green Onions, Sesame Seeds

Directions
1Heat a large skillet with peanut oil on medium high and add the sliced pork loin.
2Combine the rice vinegar, oyster sauce, soy sauce, and garlic paste together in the skillet, coating the meat with the sauce.
3Sauté the pork loin for 2 to 3 minutes, breaking it up with tongs, until lightly browned.
4Add the vegetables and cook for 3 to 4 minutes until tender and crisp. Add scrambled eggs, if desired, tossing gently until well combined.
5Serve over rice with additional hoisin sauce on the side. Garnish with chopped green onions, sliced radishes, and sesame seeds.
