1Preheat a grill to medium-high heat.
2Grill the pineapple rings for about 4 minutes per side, turning once, until lightly charred. Remove, cut in half, and set aside.
3Grill the pork medallions for about 4 minutes per side, or until the internal temperature reaches 160°F. Remove and set aside.
4In a small bowl, whisk together the sweet chili sauce and lime juice. Set aside.
5Lightly toast the baguettes on the grill. Spread mayonnaise on the bottom half of each.
6Layer each sandwich with pork medallions, grilled pineapple, mint leaves, and red onion. Drizzle with the chili-lime sauce.
