Combine broth and tomato paste using a whisk in a stock pot.
Place chopped sausage in the stock pot along with the rest of the spices, brown sugar, apple cider vinegar, Worcestershire sauce.
Cook on medium heat for about 1 hour. Lower the heat once it comes to a boil, then keep stirring to avoid burning on the bottom of the pot.
Half-way through cooking, add the chocolate and crush the sausage using the back of spoon you were using to stir to create a “ground beef” look. Add 1/4 water or more if needed.
Cook pasta according to directions while cooking your chili.
Once the chili is cooked, add salt if needed.
Place cooked pasta on a plate and top it off with chili, then plenty of cheese. Don’t be shy, it’s supposed to be full of cheese!
Add sour cream if desired.
