Directions
Heat oven to 425°F. Line a rimmed baking sheet with parchment paper.
Roll pizza dough on a clean, lightly floured surface into a 10” x 12” rectangle.
Cut the rectangle in half, making two rectangles.
Cut the rectangle into 12 1” x 6” strips. There should be 24 strips to go with the 24 pieces of sausage.
Bring 4 quarts of water to a boil in a medium pot. Add baking soda to dissolve.
As water begins to boil, wrap the strips of pizza dough around each piece of sausage, pinching at the seam to secure.
Place sausage bites in boiling water, working in two batches. Cook each batch for 2-3 minutes or until puffed. Remove with a slotted spoon and transfer to the lined baking sheet.
Brush each sausage bite with egg and sprinkle with coarse salt.
Bake for 15-20 minutes until golden brown.
Make the Spicy Cheese Dip: Place all ingredients in a small stock pot on low heat, stirring until melted. Keep warm to serve with pretzel bites.
