Ingredients
- 1 Farmer John Roasted Garlic & Herb Pork Loin Filet, cut in half1
- 1 pound Ground beef1 pound
- 2 tablespoons Chili powder2 tablespoons
- 1 tablespoon Cumin powder1 tablespoon
- 2 tablespoons Salt2 tablespoons
- 1 teaspoon Ground oregano1 teaspoon
- 1 teaspoon Ground cinnamon1 teaspoon
- 7 ounces Salsa ranchera7 ounces
- 28 ounces Crushed tomato sauce28 ounces
- 6 ounces Tomato paste6 ounces
- 1 tablespoon Cacao powder1 tablespoon
- 11 ounces Stout beer11 ounces
- 28 ounces Water28 ounces
- 1/4 cup Masa harina1/4 cup
- 2 cans Pinto beans2 cans
- to taste Cheddar Cheese, Sour Cream and Onions to taste
Instructions
Cut pork tenderloin in half and cut into smaller cubes and set aside. Save the other half for later use
Place the ground beef and pork tenderloin in a large pot. Cook over medium heat until browned. Pour in the tomato sauce, spices, salsa, tomato paste, cacao powder, water, and beer. Stir together well, cover, and then reduce the heat to low. Simmer for 1-2 hours, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time, as needed
After 2 hours or more (if time permits), place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together and add the beans and simmer for 10 minutes
Serve with shredded cheddar, chopped onions, sour cream, if desired. Serve over pasta or steamed rice
