Salsa ranchera
7 ounces

Crushed tomato sauce
28 ounces
6 ounces
Tomato paste
6 ounces
1 tablespoon
Cacao powder
1 tablespoon
11 ounces
Stout beer
11 ounces
28 ounces
Water
28 ounces
1/4 cup
Masa harina
1/4 cup
2 cans
Pinto beans
2 cans
to taste
Cheddar Cheese, Sour Cream and Onions
to taste

Directions


  1. Cut pork tenderloin in half and cut into smaller cubes and set aside. Save the other half for later use

  2. Place the ground beef and pork tenderloin in a large pot. Cook over medium heat until browned. Pour in the tomato sauce, spices, salsa, tomato paste, cacao powder, water, and beer. Stir together well, cover, and then reduce the heat to low. Simmer for 1-2 hours, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time, as needed

  3. After 2 hours or more (if time permits), place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together and add the beans and simmer for 10 minutes

  4. Serve with shredded cheddar, chopped onions, sour cream, if desired. Serve over pasta or steamed rice
