Preheat oven to 350 degrees
In a standing mixer using a whisk attachment, mix lard together with sugar for about 2 minutes until sugar incorporate with the lard
Add eggs and vanilla extract
Slowly add the flour to mix
Spray sheet pan with cooking spray, then pour the mixture into the pan. Use a spatula to even out the cookie batter
Bake for 15-20 minutes until edges are golden brown. Set aside to cool off
In a double boiler, melt chocolate. Then spread chocolate on top of baked pan of cookies
Sprinkle with chopped desired ground nuts. Cut in squares and store in a container if not eaten right away. (Pro tip: Store in a cookie tin at room temperature using wax paper in between each cookie)
