Directions
Cook the bacon at 450°F for 10-20 minutes until crisp. Preheat a flat top grill pan to medium-high heat
In a small bowl, mash the avocado with 1 teaspoon of salt, fresh-squeezed lemon juice, and chili flakes. Set aside
In a medium bowl, mix the sausage, cheese, shallots, garlic, remaining ¼ teaspoon of salt and pepper. Form the meat mixture into 8 equal-sized patties
Cook the mini patties for 3-4 minutes on each side. Remove from the pan and serve on split buns with some arugula, half a slice of bacon, a slice of pepper jack cheese, a tablespoon of mashed avocado and chipotle mayo on each bun
Chipotle Mayonnaise: Mix all of the ingredients together in a medium bowl until peppers are emulsified. Cover with plastic wrap and refrigerate until serving, allowing the flavors to meld. Can be made a day ahead. Summer note: Why not cook the burgers and bacon on the grill? Optional sides: eggs, fruits or tater tots
