6 ounces Blue cheese crumbles
 
1 Shallot, peeled & minced
 
2 cloves Garlic, minced
 
1 1/4 teaspoons Salt
 
1/4 teaspoon Black pepper
 
1/16 teaspoon Chili flakes
 
2 Avocados, smashed
 
1 Lemon, freshly squeezed
 
4 ounces Arugula
 
8 slices Pepper jack cheese
 
8 Slider brioche buns or Hawaiian rolls

Chipotle Mayonnaise

 
8 ounces Mayonnaise
 
2 Chipotle Peppers in Adobo Sauce
 
1/2 Lemon, freshly squeezed
 
1/2 teaspoon Black pepper
 
1 teaspoon Salt

Directions
1Cook the bacon at 450°F for 10-20 minutes until crisp. Preheat a flat top grill pan to medium-high heat
2In a small bowl, mash the avocado with 1 teaspoon of salt, fresh-squeezed lemon juice, and chili flakes. Set aside
3In a medium bowl, mix the sausage, cheese, shallots, garlic, remaining ¼ teaspoon of salt and pepper. Form the meat mixture into 8 equal-sized patties
4Cook the mini patties for 3-4 minutes on each side. Remove from the pan and serve on split buns with some arugula, half a slice of bacon, a slice of pepper jack cheese, a tablespoon of mashed avocado and chipotle mayo on each bun
5Chipotle Mayonnaise: Mix all of the ingredients together in a medium bowl until peppers are emulsified. Cover with plastic wrap and refrigerate until serving, allowing the flavors to meld. Can be made a day ahead. Summer note: Why not cook the burgers and bacon on the grill? Optional sides: eggs, fruits or tater tots
