Slice bread into small cubes and let dry on the counter for a couple of hours. Brown the sausage in a saucepan over medium heat until cooked through. Once cooked, stir in 2 tablespoons of maple syrup. Set mixture aside to cool off.
In a medium mixing bowl, whisk eggs, buttermilk, and vanilla extract together until combined.
Place melted butter, brown sugar, and cinnamon in a casserole dish pan and mix well. Spread the mixture evenly on the bottom of the pan.
Arrange cut bread in the pan over the brown sugar mixture.
Gently pour the egg mixture over the bread ensuring all of the bread is soaked, then top with the cooked maple crumbled sausage. Cover the pan with plastic wrap and refrigerate overnight, or bake right away.
Bake in a preheated oven at 350ºF for 30 minutes, ensuring the bread doesn't brown. Serve with maple syrup and fruit. Pro tip: This is a great dish to make the night before and bake in the morning!
