Chili powder
1 teaspoon
2 teaspoons
Salt
2 teaspoons
1/2 teaspoon
Ground Black Pepper
1/2 teaspoon

Tomato paste
6 ounces
4 ounces
Diced Green Chiles
4 ounces
15 ounces
Black beans, rinsed & drained
15 ounces
16 ounces
Water
16 ounces

Large Eggs
4
6 ounces
Jack cheese, shredded
6 ounces
Sour cream & Avocado, for toppings
Corn tortillas or Chips, for dipping

Directions


  1. Preheat the oven to 450°F

  2. Heat olive oil in a cast iron pan and sauté scallions and jalapeños with ground sausage until browned. Add cumin, chili powder, black pepper, and salt, and sauté for 2-3 minutes more. Add tomato paste, beans, diced green chilies, and water to the pan and let it cook at low simmer for 15-20 minutes, or until the mixture is slightly thickened

  3. Using the back of a spoon, make an indentation in the mixture, and crack an egg into the little pocket. Repeat around the pan with all 4 eggs

  4. Place cast iron in the oven for about 4-5 minutes, or until the eggs are starting to look set but still fairly wet looking. Remove and change the oven to broil

  5. Sprinkle cheese over the top and place under the broiler for 1-3 minutes, or until the cheese has melted

  6. Serve hot with sour cream and avocado on top with chips or corn tortillas on the side
