Heat a griddle or large skillet over medium-low heat. In a bowl, mix together the dry ingredients. Beat the eggs with 1½ cups of milk, then stir in 2 tablespoons of melted butter or bacon fat, Nutella, and chopped bacon. Gently stir mixture into dry ingredients enough to moisten the flour. Don't worry about a few lumps. If the batter seems too thick, add a little more milk
Place a teaspoon or 2 of butter or oil on a griddle or skillet. When butter foam subsides or the oil shimmers, ladle batter onto the griddle or skillet, making pancakes of any size you like. Adjust heat, as necessary. Flip pancakes after bubbles rise to surface and the bottoms brown after 2-4 minutes
Cook pancakes until the second sides are lightly browned. Serve with maple syrup and any optional sides you prefer. Optional toppings: maple syrup, fruit. Optional sides: Eggs, Bacon
