Cumin Powder
1 teaspoon
1/4 teaspoon
Cayenne Pepper
1/4 teaspoon
2 tablespoons
Chili Powder
2 tablespoons
1 teaspoon
Kosher Salt
1 teaspoon
1 teaspoon
Ground Black Pepper
1 teaspoon

Tomato Paste
6 ounces
30 ounces
Red Kidney Beans, Drained
30 ounces
Pinch of Saffron Threads

Directions


  1. In a large pot on medium heat, sauté onions until translucent, then add minced garlic.

  2. Cut the polish sausage into 1/2" slices and add to onion and garlic mixture until browned. Add the remaining ingredients and stir.

  3. Bring to a boil and let simmer for 30 minutes or more.

  4. Serve with a side of sour cream, diced green onions, and/or over rice.
