In a large pot on medium heat, sauté onions until translucent, then add minced garlic.
Cut the polish sausage into 1/2" slices and add to onion and garlic mixture until browned. Add the remaining ingredients and stir.
Bring to a boil and let simmer for 30 minutes or more.
Serve with a side of sour cream, diced green onions, and/or over rice.
