Heat oven to 350º F. Grease a 12-cup muffin pan and press a tortilla into each of the 12 greased muffin tins, using your fingers. Set aside.
Cook sausage links until golden brown.
In a medium bowl, whisk the eggs and cream until fully combined. Add half of the cheddar cheese and set the other half aside. Sprinkle salt and pepper to taste.
Pour scrambled eggs equally into the prepared tortillas. Top off each cup with cooked sausage, then sprinkle some goat cheese (about 1 teaspoon) into each cup. Add pickled jalapeños and the rest of the cheese.
Bake for 20 minutes until the cheese is bubbly and the tortilla crust is golden. Serve warm with scallions or diced tomatoes on top.
