Preheat the oven to 375°F. Prep your vegetables and set aside
In a large 5-quart cast iron pan, heat the olive oil and add onion to cook until fragrant. Add potatoes and minced garlic, then cook until lightly browned on the edges for about 15 minutes
Add corn, bell pepper, Serrano pepper, salt, black pepper, paprika, and stir. Add sausage and keep stirring for about 3 minutes
Remove from the heat and transfer the cooked sausage into a sheet pan. Insert each egg in a hole and place the sheet pan in the oven, cooking the eggs for 10 minutes. Remove from the oven, divide the hash by 4 with egg and serve immediately. Top with minced parsley and a side of toast
