3 Yukon Gold potatoes, diced small
 
1 Yellow bell pepper, diced small
 
2 Serrano pepper, diced small
 
6 cloves Garlic, minced
 
1 cup White corn
 
1 Onion, diced small
 
2 teaspoons Salt
 
1 teaspoon Black pepper
 
1 teaspoon Paprika
 
Oil, for drizzle
 
4 Eggs
 
1 bunch Parsley, minced finely
 
Hot sauce, if desired
 
Toast

Directions
1Preheat the oven to 375°F. Prep your vegetables and set aside
2In a large 5-quart cast iron pan, heat the olive oil and add onion to cook until fragrant. Add potatoes and minced garlic, then cook until lightly browned on the edges for about 15 minutes
3Add corn, bell pepper, Serrano pepper, salt, black pepper, paprika, and stir. Add sausage and keep stirring for about 3 minutes
4Remove from the heat and transfer the cooked sausage into a sheet pan. Insert each egg in a hole and place the sheet pan in the oven, cooking the eggs for 10 minutes. Remove from the oven, divide the hash by 4 with egg and serve immediately. Top with minced parsley and a side of toast
